A happy life on the pasture is the most important ingredient for a perfect steak. The Limousin cattle raised at the Restaurant 800°C are clearly enjoying their time there. Plenty of space in the pasture. Fresh air. And true tranquility, which is hard to find in the Vulkaneifel still exists. 

The feed? It comes from our own production. No imported concentrated feed—just what the region has to offer. Anyone who walks past the pasture and watches the animals will immediately understand what this is all about. It’s about respect. It’s about appreciation. It’s about transparency.

Pure refinement. When time perfects the flavor.

After slaughter, the aging process begins. The beef backs are placed in the glass-enclosed dry-aging cabinets located in the center of the restaurant. There , they age for up to six weeks under controlled temperature and humidity conditions. 

Something special happens during this time. The meat loses moisture. The enzymes go to work. The fibers become more tender. And the flavor? It becomes more intense. More robust. It develops a depth of flavor that you can only find in dry-aged beef. And then comes the big moment: the 800°C grill. In seconds, the extreme heat sears the meat. A crispy crust forms on the outside. Inside, it remains juicy and tender.
